We place chicken in the slow cooker, season it with chili powder, cumin, salt, and pepper, then add onion, bell peppers, tomatoes, green chilies, chicken broth, tomato paste, chipotle pepper, and black beans, stirring everything together.

This classic French beef stew is a delicious comfort food for cold weather. I start by searing well-marbled beef and then braising it with garlic and onions in a rich wine-based broth. After removing excess fat, I season it. Before returning the beef add flour, wine, broth, thyme, bay leaves, and sugar.

The sight of golden melted cheese bubbling on top of French onion Soup is mouthwatering to me. I melt butter with olive oil in a large pan and add onions, sprinkling in sugar and stirring frequently until they are caramelized and golden. After increasing the heat, I gradually add wine and beef stock. I toast the bread first and then add it to the soup when serving.

 I use leftover holiday ham for making leftover ham and split pea soup, a hearty and easy recipe. Once the larger slices are gone, this soup utilizes the smaller pieces near the bone. When my vegetarian friends come, I also omit the ham. It features earthy flavors from bay leaves, onion, and vegetables, and can be blended for a smoother texture.

Finally, I serve the dish with grated Parmesan and extra pepper.
